laptop tablet conversion

I'm looking for a Tablet PC program where you can write by hand without a lot of notes and I can not convert it to text …?

I found a few, but none that is compatible with my operating system and / or the version of Microsoft Office. I have Windows 7 and Microsoft Office 2007. I have a HP tx2500 laptop if that helps. I need this for school, I take the science and are therefore going to write many forms (and hence why I do not want to convert text and little need of space to write)
